Chef Network Skill Social Series presents: Bread Clinic with Bread Man Walking

Hosted by Gerry Godley of Bread Man Walking, this bread clinic is an opportunity to dive into the world of high hydration, slow fermented and naturally leavened bread with one of Dublin’s most popular microbakers and sourdough instructors.

Over three hours, in an interactive workshop, Gerry will take you through the sourdough fundamentals and there will be a hands-on aspect, with shaping, scoring and baking off of a batch of actively fermenting dough.  There will be starter and bread to take home and a chance to socialise with fellow chefs over a nice lunch  prepared by Gerry, who was also a chef for a decade back in the day.

Whether you are looking to integrate sourdough into your professional practice, get an insight into how to run a microbakery, or just  keen to make it for your self, you’ll find this a rewarding session.

 Topics covered include:
  • basic sourdough microbiology
  • fundamentals of fermentation

  • the role of time and temperature
  • oven set ups and equipment
  • bread formulae and bakers maths
  • sourdough starter maintenance
  • flour selecting and sourcing

Tickets are non-refundable after Wednesday the 15th of April, if for any reason you cannot attend please let us know and we will attempt to resell your spot in which case we will refund the full amount. 

Meet your Tutor:
Gerry Godley AKA ‘Bread Man Walking’ worked as a chef in his twenties and then enjoyed a career in the music industry, before returning to food over the past decade, developing a love for bread and baking. Having perfected his skills over the covid pandemic, he launched a micro-bakery in his home in Rialto which quickly became a Dublin icon and had punters queuing round the block on Saturday mornings for his famous pastries and sourdough breads.

Skill Social Series:
2026 marks 10 years since the launch of Chef Network and we are going back to basics, with a series of events to build the chef community on the ground and contribute to learning and skills development for chefs. In line with our original aims, and with what members have told us they want, we are creating a series of regional events that bring small numbers of chefs together to network and at the same time learn a skill or gain new knowledge – so a skill element and a social element: Skill Socials! Across the Spring and Autumn, you can expect a number of small-scale events like bread workshops, foraging trips, and farm visits.
