Hy guys,

Cooking for a good while now, after my training in France, went through many top Michelin stars restaurants in UK over the years (Roux brothers, Pierre Chevillard, Pierre Kaufman, Raymond Blanc, and for French Michelin chef working in London (Michel Lorrain) to name a few.
Spend time in Gregan's castle as head chef and the Kclub as sous chef then opened my first restaurant in 1996 in Naas Co Kildare

Received numerous awards there over the twelve years we were open for food and wine, our wine list had over 250 wines and Champagnes.

Appeared a few times in Food and Wine magazine for different articles.

Was a director of the restaurant association of Ireland for 5 years

Closed restaurant in 2008 and move back to France for 4 years, on return, i took over café en Seine for a year, rebuilt a team, a kitchen and everything else in between.

I decided with my wife to change the way we were living, so we develop a fruit and vegetable garden in our field behind the house, added two large polytunnels, used recycling materials for the pathways, raised beds and tunnel floor tiles, we then open in 2014 what was originally a farm food shop that became a small capacity restaurant now.

I use everything we grow, in our kitchen, always looking for interesting seeds and original fruits and vegs to grow, our menu is very short at night, with a choice of two starters and two mains to choose from, all desserts are done in house, in fact everything is done in house, open three lunches and two dinners per week.
