Join Chef Consultant Niall Hill as he takes participants through how to gain more control of managing your costs, growing your business and improving your profitability. 

*This Masterclass is for professional chefs only. This workshop is aimed primarily at Chef de Partie level upwards.

WHAT YOU WILL LEARN:
On completion of this masterclass, you will understand what you can control and how your business can grow sustainably while improving the quality of your food and reducing the costs.

We will look into techniques in negotiating with suppliers, locking in prices, agreeing LTA’s and the importance of seasonality. I will take you through yield analysis, food cost, recipe design, menu planning and margin erosion. Finally, will look at labour costs, waste and how to control them.

This knowledge when put into practice will give you more control of managing your costs, growing your business and improving your profitability.


STRUCTURE/BREAKDOWN OF THE WORKSHOP:

• Practical demo on yield analysis and evaporation

• Q & A

Running time of the course is 3 hours (with a short break in the middle), with an additional hour available for Q&A/networking if required. 

Course: 4:00pm - 7:00pm
Additional Q&A/Discussion: 7-8pm


PLEASE ARRIVE BY 3:45pm to register.
All attendees are required to fill out registration form and sign-in.
You will also be asked to complete a short evaluation sheet after the training.
Both Trainee registration sheets and evaluations are required in order to avail of the subsidised funding.

NIALL HILL:  With over 30 years’ experience both national and international Niall is best known for his work as head of food at the award-winning food company The Butler’s Pantry. Over the last 16 years Niall has won numerous of awards including the great taste awards, small business award and blas na hEireann. Niall has been a regular contributor to the food and wine magazine, TV3, guest chef for Miele, Cooks Academy & Taste of Dublin.
