Join Chef Consultant Niall Hill as he takes participants through how to gain more control of managing your costs, growing your business and improving your profitability.

WHAT YOU WILL LEARN:
On completion of this masterclass, you will understand what you can control and how your business can grow sustainably while improving the quality of your food and reducing the costs.

We will look into techniques in:
1. Negotiating with suppliers
2. Locking in prices
3. Agreeing LTA’s
4. The importance of seasonality.

I will take you through yield analysis, food cost, recipe design, menu planning and margin erosion. Showing you how you can save money through each step of creating a dish which will allow you to invest that money back into your business to help it grow.

Finally, will look at labour costs & waste and how you can control these as well.

This knowledge, when put into practice, will give you more control of managing your costs, growing your business and improving your profitability.

Running time of the course is 3 hours (with a short break in the middle), with an additional hour available for Q&A/networking if required.

NIALL HILL:  With over 30 years’ experience both national and international Niall is best known for his work as head of food at the award-winning food company The Butler’s Pantry. Over the last 16 years, Niall has won numerous awards including the great taste awards, small business award and Blas na hEireann. Niall has been a regular contributor to the food and wine magazine, TV3, guest chef for Miele, Cooks Academy & Taste of Dublin.
