Visit two of London’s newest and most exciting restaurant openings, Silo and Allegra, in one day!

Chef Network is preparing to go on the road again. After a wonderfully illuminating and delicious visit to Copenhagen last year, this year we are hopping across to London this time to experience some cutting-edge cooking in another of the world’s culinary capitals.

And because you are coming with Chef Network and Food on the Edge, the chefs are throwing the doors open so that you can have much more than the usual dining experience. Meet the chefs, tour the kitchens, see how the dishes are developed and more.

You need to book your own flights. The closest airport is London City, 30 mins from Silo, next best option is Stanstead, 1hr from Silo.

The world’s first zero-waste restaurant           

Silo is a restaurant “designed from back to front, always with the bin in mind”, where they have eliminated waste. They source carefully from “clean farming” with a mind to the pre-industrial food system, using both traditional and contemporary techniques, to create great tasting food with respect for nature.

Silo in Brighton has relocated to a new home in London and will re-open in late October - and you can be one of the first to eat there. Your chance to not only dine at Silo, but to meet with chef-owner Doug McMaster to hear about their philosophy and to ask him any questions you like, have a tour of Silo and of Crate brewery next door (with tastings!), and to get a demo of some of Silo’s key culinary techniques while your 3 course zero waste lunch is prepared in the open kitchen.

12:00pm - Doug does a quick Silo Presentation / Q&A

12:30pm - Tour of Silo & Crate facilities

1:00pm - Beer or Kombucha Tasting

1:45pm - Late 3 course Lunch at our Open Kitchen and Doug to go through some of the techniques we have created & utilised at Silo

Anyone who has seen Doug speak at Food on the Edge will know that he has taken the concept of ‘zero waste’ to another level, not just when it comes to food but across the entire operation. And in terms of the food, his key message is “it’s still got to taste excellent, or you’re wasting your time”.

Outstanding design, exuberant hospitality, inventive seasonal cooking

Headed up by Irish chef Patrick Powell, Allegra opens this September in the Stratford, an iconic new development in Queen Elisabeth Olympic Park London. Having worked at L’Ecrivain before moving to the UK, Patrick has spent time at Wild Honey with Anthony Demetre and most recently, four years at Chiltern Firehouse under Nuno Mendes.


When Chiltern Firehouse owner Harry Handelman was looking for a chef to collaborate with who would understand his vision for a culinary destination at the Stratford, he knew Patrick would fit the bill. Patrick’s emphasis on the provenance of his produce led Harry to acquire land Sussex for the restaurant’s own farm, which will supply much of its ingredients.

If you have been following Patrick on Instagram over recent months, you will know why we are excited to organise a dinner here and experience the picture-perfect dishes he has been developing for the new restaurant. In addition to a specially created 5-course menu, get the chance to chat with Patrick and have a tour of the open kitchen – which he is very proud of (again, check out his Instagram!). Anyone with an interest in restaurant design will definitely want to come along for this one; designed by the team behind NOMA, the restaurant overlooks a highline sky garden, has in-house curing room, and a terrace with outdoor wood-burning grill.
