Following the completion of a four year City and Guild apprentice for restaurant service I worked in the restaurant sector for 15 years as a waiter. I gained a number of International awards for restaurant competitions before  returning to educatiing and completing a Doctor of Education Higher Degree, MA., B.Sc in management from Trinity College Dublin, and Honours Masters Degree in Hospitality Managemen, DIT. I have a passion for culinary education and the development of an education provision that is diversified, dynamic and distinctive to each of our students. An education that ensures our graduates are employable, adaptable and have transferable skills.
