Hi everyone. I am currently working in the Brooklodge and Macreddin Village as a senior chef de partie, thoroughly enjoying cooking on the line again. Previously I worked in The Wild Honey Inn in Clare. I was head chef in Hugo's Restaurant in Dublin for almost 3years. Before that I spent a year in Australia, short time in the south of France. I spent almost 3years in the Waterside Inn. I attended Cathal brugha street completing a professional cookery course and Culinary Arts degree. While attending college I spent nearly 4years working in the Merrion Hotel, spending a lot of that time on pastry with Paul kelly. I also spent a 6month placement in Arbutus in London as part of college placement.
